This recipe originally came from Alton Brown of Good Eats fame. I had to change a few things from the original, specifically the binder and gravy recipes. I converted it to a pretty good low carb recipe, and even the reported nutrition information at 3.8h net carbs might even be a bit high. One might ask why I used the stand mixer to mix the meat mixture together where others I used my hands or my daughters' hands, but with this recipe, I wanted to hold the meatballs together. For that they needed to be mixed really well.
